Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon red curry paste
- 4 cups chicken broth
- 1 can coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 lime, juiced
- 1/2 pound shrimp, peeled and deveined
- 1/2 cup cilantro, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook until softened, about 5 minutes.
- Add the curry paste and cook for another minute.
- Add the chicken broth, coconut milk, fish sauce, soy sauce, brown sugar, and lime juice.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the shrimp and cook until pink and cooked through, about 5 minutes.
- Stir in the cilantro and serve hot.
