Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 large zucchini
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the onion, garlic, bell pepper, and jalapeno pepper to the skillet. Cook until the vegetables are softened.
  • Stir in the diced tomatoes, tomato sauce, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Simmer for 10 minutes.
  • Meanwhile, cut the zucchini in half lengthwise and scoop out the seeds to create a boat shape.
  • Place the zucchini boats in a baking dish. Spoon the meat mixture into the boats.
  • Bake at 375°F for 20 minutes, or until the zucchini is tender.
  • Remove from the oven and sprinkle with shredded cheddar cheese. Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped fresh cilantro before serving.
