- 1 can (8 oz) tomato sauce

- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 large zucchini
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
