Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 can diced tomatoes
- 1 can tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 large zucchini
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the onion, garlic, bell pepper, and jalapeno pepper to the skillet. Cook until the vegetables are softened.
- Stir in the diced tomatoes, tomato sauce, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Simmer for 10 minutes.
- Meanwhile, cut the zucchini in half lengthwise and scoop out the seeds to create a boat shape.
- Place the zucchini boats in a baking dish. Spoon the meat mixture into the boats.
- Bake at 375°F for 20 minutes, or until the zucchini is tender.
- Remove from the oven and sprinkle with shredded cheddar cheese. Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh cilantro before serving.
