- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 4 cups mixed greens
- 1/4 cup apple cider vinegar
- 1 tbsp honey
- 1/2 tsp red pepper flakes
- 1/4 cup olive oil
Instructions
- Preheat oven to 400°F.
- In a large bowl, toss chickpeas, bell peppers, and red onion with olive oil, smoked paprika, garlic powder, cumin, and salt.
