Ingredients
- 4 large tomatoes, diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/4 cup white vinegar
- 1/4 cup brown sugar
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large saucepan, heat some oil over medium heat.
- Add the onion and garlic, and cook until softened.
- Add the diced tomatoes, bell peppers, vinegar, brown sugar, cumin, paprika, and chili powder.
- Season with salt and pepper to taste.
- Simmer the mixture for about 30 minutes, stirring occasionally.
- Remove from heat and let it cool.
- Transfer the relish to sterilized jars and seal tightly.
- Store in the refrigerator for up to 2 weeks.
- Serve as a condiment with burgers, sandwiches, or grilled meats.
