Ingredients

  • 1 lb beef tenderloin, finely chopped
  • 1 shallot, finely chopped
  • 2 tbsp capers, drained and finely chopped
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1 egg yolk
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste

Directions
