Ingredients

  • 1 lb. beef tenderloin, finely chopped
  • 1 shallot, finely chopped
  • 2 tbsp. capers, drained and finely chopped
  • 2 tbsp. Dijon mustard
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. smoked paprika
  • 1/2 tsp. cayenne pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • Salt and freshly ground black pepper, to taste

Instructions

  • In a large bowl, combine the beef, shallot, capers, Dijon mustard, Worcestershire sauce, smoked paprika, cayenne pepper, parsley, and chives. Mix well to combine.
  • Season the mixture with salt and freshly ground black pepper, to taste.
  • Divide the mixture into four equal portions and shape each portion into a patty.
  • Serve the steak tartare immediately, garnished with additional chopped herbs, if desired.
