Ingredients

  • 1 lb pork loin, cubed
  • 2 cups fresh spinach
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1 can coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat vegetable oil over medium heat.
  • Add chopped onion, garlic, and ginger. Sauté until fragrant.
  • Add cubed pork loin and brown on all sides.
  • Stir in cumin, coriander, turmeric, and cayenne pepper. Cook for another minute.
  • Pour in coconut milk and bring to a simmer. Cover and cook for 20 minutes, or until pork is tender.
  • Add fresh spinach and cook until wilted.
  • Season with salt and pepper to taste.
