Ingredients
- 1 lb pork loin, cubed
- 2 cups fresh spinach
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 can coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat vegetable oil over medium heat.
- Add chopped onion, garlic, and ginger. Sauté until fragrant.
- Add cubed pork loin and brown on all sides.
- Stir in cumin, coriander, turmeric, and cayenne pepper. Cook for another minute.
- Pour in coconut milk and bring to a simmer. Cover and cook for 20 minutes, or until pork is tender.
- Add fresh spinach and cook until wilted.
- Season with salt and pepper to taste.
