Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil
  • 2 sweet potatoes, peeled and cubed
  • 4 cups baby spinach
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 400°F.
  • In a bowl, toss chickpeas with cumin, paprika, garlic powder, salt, cayenne pepper, and 1 tbsp olive oil. Spread on a baking sheet and bake for 20-25 minutes, until crispy.
  • In another bowl, toss sweet potatoes with remaining 1 tbsp olive oil. Spread on a separate baking sheet and bake for 25-30 minutes, until tender and lightly browned.
  • In a small bowl, whisk together tahini, lemon juice, water, garlic, salt, and pepper to make the dressing.
  • To assemble the power bowls, divide spinach between four bowls. Top with spiced chickpeas and roasted sweet potatoes. Drizzle with tahini dressing.
  • Serve immediately and enjoy!
