Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 2 tbsp olive oil, divided
- 2 medium sweet potatoes, peeled and cubed
- 4 cups baby spinach or kale
- 1/4 cup tahini
- 2 tbsp lemon juice
- 2 tbsp water
- 1 clove garlic, minced
- Salt and pepper to taste

Preheat the oven to 400°F (200°C).

Toss the chickpeas with cumin, paprika, garlic powder, salt, cayenne, and 1 tbsp olive oil. Spread on a baking sheet.

In a separate bowl, toss sweet potatoes with remaining olive oil. Spread on another baking sheet.

Roast chickpeas for 20-25 minutes and sweet potatoes for 25-30 minutes, until crispy and tender respectively.
