Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 2 tbsp olive oil
- 2 sweet potatoes, peeled and cubed
- 4 cups baby spinach
- 1/4 cup tahini
- 2 tbsp lemon juice
- 2 tbsp water
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F.
- In a bowl, toss chickpeas with cumin, paprika, garlic powder, salt, cayenne pepper, and 1 tbsp olive oil. Spread on a baking sheet and bake for 20-25 minutes, until crispy.
- In another bowl, toss sweet potatoes with remaining 1 tbsp olive oil. Spread on a separate baking sheet and bake for 25-30 minutes, until tender and lightly browned.
- In a small bowl, whisk together tahini, lemon juice, water, garlic, salt, and pepper to make the dressing.
- To assemble the power bowls, divide spinach between four bowls. Top with spiced chickpeas and roasted sweet potatoes. Drizzle with tahini dressing.
- Serve immediately and enjoy!
