Ingredients
- 1 spaghetti squash
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Brush the cut sides of the squash with olive oil and place them cut-side down on a baking sheet.
- Bake for 40-45 minutes, or until the squash is tender and easily pierced with a fork.
- While the squash is baking, heat the remaining olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell pepper, zucchini, and mushrooms and cook for another 5 minutes, until the vegetables are tender.
- Stir in the diced tomatoes, oregano, basil, salt, and pepper. Cook for an additional 5 minutes.
- Once the squash is done baking, use a fork to scrape the flesh into spaghetti-like strands.
- Divide the squash strands among plates and top with the vegetable mixture.
- Sprinkle with grated Parmesan cheese and serve hot.
