Ingredients

  • 1 spaghetti squash
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Brush the cut sides of the squash with olive oil and place them cut-side down on a baking sheet.
  • Bake for 40-45 minutes, or until the squash is tender and easily pierced with a fork.
  • While the squash is baking, heat the remaining olive oil in a large skillet over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the bell pepper, zucchini, and mushrooms and cook for another 5 minutes, until the vegetables are tender.
  • Stir in the diced tomatoes, oregano, basil, salt, and pepper. Cook for an additional 5 minutes.
  • Once the squash is done baking, use a fork to scrape the flesh into spaghetti-like strands.
  • Divide the squash strands among plates and top with the vegetable mixture.
  • Sprinkle with grated Parmesan cheese and serve hot.
