Ingredients
- 2 cups dried butterbeans
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 4 cups chicken broth
- 1 bay leaf
Instructions
- 1. Rinse the dried butterbeans and soak them in water overnight.
- 2. In a large pot, cook the chopped bacon over medium heat until crispy.
- 3. Add the diced onion and minced garlic to the pot and cook until the onion is translucent.
- 4. Drain the soaked butterbeans and add them to the pot.
- 5. Season with salt, black pepper, and paprika.
- 6. Pour in the chicken broth and add the bay leaf.
- 7. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 to 1 1/2 hours, or until the butterbeans are tender.
