- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado, diced
- 1 lime, juiced
- 1/4 cup chopped fresh cilantro
Instructions
- Cook quinoa according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add onion and bell pepper and cook until softened, about 5 minutes.
- Add garlic and cook for an additional minute.
- Add black beans, cumin, chili powder, paprika, salt, and black pepper to the skillet and stir to combine.
- Add cooked quinoa to the skillet and stir to combine.
