- 1 cup uncooked white rice
- 2 cups water
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tablespoon vegetable oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 carrots, peeled and chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 cup frozen peas
- 2 green onions, chopped
Instructions
- In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low and simmer for 18-20 minutes, or until rice is tender and water is absorbed.
- In a small bowl, whisk together soy sauce and honey. Set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add onion and garlic and cook until softened, about 2-3 minutes.
- Add ginger, black pepper, and red pepper flakes and cook for an additional 30 seconds.
- Add carrots and bell peppers and cook for 3-4 minutes, or until vegetables are tender.
- Add frozen peas and cook for an additional 1-2 minutes, or until peas are heated through.
- Add cooked rice and soy sauce mixture to the skillet and stir until well combined.
- Cook for an additional 2-3 minutes, or until everything is heated through.
- Garnish with chopped green onions and serve hot.
