Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup nonfat plain Greek yogurt

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the mushrooms and cook until they release their liquid, about 5 minutes.
  • Add the chicken broth, water, thyme, salt, and pepper and bring to a boil.
  • Reduce the heat and simmer for 20 minutes.
  • Remove from the heat and let cool slightly.
  • Puree the soup in a blender until smooth.
  • Return the soup to the pot and stir in the Greek yogurt.
  • Reheat the soup over low heat until warmed through.
  • Serve hot.
