Ingredients
- 1 lb ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup quinoa
- 2 cups chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the onion, garlic, red bell pepper, and green bell pepper to the skillet and cook until the vegetables are tender.
- Add the diced tomatoes, black beans, quinoa, chicken broth, chili powder, cumin, paprika, salt, and black pepper to the skillet and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
- Simmer for 20-25 minutes, or until the quinoa is cooked and the liquid has been absorbed.
- Stir in the chopped cilantro and serve.
