Ingredients

  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large skillet, cook the ground turkey over medium heat until browned.
  • Add the onion, garlic, red bell pepper, and green bell pepper to the skillet and cook until the vegetables are tender.

  • Simmer for 20-25 minutes, or until the quinoa is cooked and the liquid has been absorbed.
  • Stir in the chopped cilantro and serve.
