Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 cups of mixed vegetables (such as bell peppers, broccoli, and carrots), chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- Salt and pepper to taste
Instructions
- 1. Heat the olive oil in a large skillet over medium heat.
- 2. Add the minced garlic and sauté for about 1 minute, until fragrant.
- 3. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until pink and cooked through.
- 4. Remove the shrimp from the skillet and set aside.
- 5. In the same skillet, add the chopped vegetables and sauté for 5-6 minutes, until tender-crisp.
- 6. Return the shrimp to the skillet and add the soy sauce and sesame oil.
- 7. Stir everything together and cook for an additional 1-2 minutes, until heated through.
- 8. Season with salt and pepper to taste.
- 9. Serve the shrimp veggie delight hot, with steamed rice or noodles if desired.
