Ingredients

  • 8 ounces spaghetti
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Fresh basil leaves, chopped, for garnish

Directions

  1. 1

Cook spaghetti in salted water according to package directions until al dente. Drain, reserving 1 cup of pasta water.

  2. 2

Heat olive oil in a large skillet over medium heat. Add garlic and cook for about 1 minute until fragrant.

  3. 3

Add shrimp, season with salt and red pepper flakes, and cook for 2-3 minutes each side, until pink and opaque. Remove and set aside.

  4. 4

In the same skillet, add diced tomatoes, dried basil, and oregano. Season with salt and pepper. Cook for 5-7 minutes.

  5. 5

Mix in lemon juice and pasta water to the sauce to reach desired consistency, then return the shrimp to the skillet.

  6. 6

Add cooked spaghetti to the skillet, tossing to coat in the sauce. Heat through for 2-3 minutes.

  7. 7

Stir in grated Parmesan cheese, mixing well.

  8. 8

    Serve garnished with fresh basil.

Chef's tip

For a richer sauce, add a splash of white wine after cooking the garlic. Adjust the red pepper flakes to your desired heat level.
