Shrimp and Scallops Delight

About this recipe

This modern take on a classic seafood dish features fresh shrimp and scallops bathed in a light citrus and white wine sauce. Perfect for both special occasions and quick weeknight dinners, this recipe offers a balanced blend of flavors that highlights the natural sweetness of the seafood.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb scallops
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/3 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1 cup cherry tomatoes, halved
  • Salt and freshly ground black pepper to taste

Directions

  1. 1

Pat the scallops dry with a paper towel. Heat olive oil in a large skillet over medium-high heat.

  2. 2

Add garlic and sauté for 1 minute until fragrant.

  3. 3

Add scallops to the skillet and sear for 1-2 minutes on each side until golden. Remove and set aside.

  4. 4

In the same skillet, add shrimp and cook until they turn pink, about 2 minutes per side.

  5. 5

Return scallops to the skillet with shrimp. Add white wine and lemon juice, scraping the skillet’s bottom to deglaze.

  6. 6

Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.

  7. 7

Stir in fresh parsley, season with salt and pepper, and toss everything to coat in the sauce.

  8. 8

Remove from heat and serve warm with your choice of pasta or bread.

Chef's tip

Ensure both shrimp and scallops are fresh for the best flavors. Avoid overcooking to maintain tenderness.
