Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste

Directions

    Preheat your oven to 425°F (220°C).

    Heat olive oil in a large oven-proof skillet over medium heat.

    Add diced onion, minced garlic, and diced bell pepper to the skillet. Sauté until softened.

    Season chicken breasts with salt, pepper, cumin, paprika, and chili powder.

    Add seasoned chicken to the skillet, searing both sides until golden brown.

    Pour chicken broth into the skillet and bring to a simmer.

Chef's tip
