- 1 red bell pepper, diced
- 1 medium zucchini, diced
- 1 can (14 oz) diced tomatoes, drained
- 1 tsp. dried basil or 1 tbsp fresh basil, chopped
- 1/2 tsp. dried oregano
- Salt and freshly ground black pepper to taste
- 1/4 cup freshly grated Parmesan cheese
