Ingredients
- 8 oz. short pasta
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 can diced tomatoes
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package directions.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add onion and garlic and cook until softened, about 5 minutes.
- Add red bell pepper and zucchini and cook for another 5 minutes.
- Stir in diced tomatoes, basil, oregano, salt, and pepper.
- Simmer for 10 minutes.
- Drain pasta and add to skillet with sauce.
- Toss to combine.
- Serve with grated Parmesan cheese.
