Ingredients

  • 8 oz. short pasta
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can diced tomatoes
  • 1 tsp. dried basil
  • 1/2 tsp. dried oregano
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  • Cook pasta according to package directions.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add onion and garlic and cook until softened, about 5 minutes.
  • Add red bell pepper and zucchini and cook for another 5 minutes.
  • Stir in diced tomatoes, basil, oregano, salt, and pepper.
  • Simmer for 10 minutes.
  • Drain pasta and add to skillet with sauce.
  • Toss to combine.
  • Serve with grated Parmesan cheese.
