Ingredients
- 1 tablespoon olive oil
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 cup canned black beans, drained and rinsed
- 2 large eggs, beaten
- Salt and pepper, to taste
- 2 large flour tortillas
- 1/4 cup shredded cheddar cheese
- Salsa, for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and red bell pepper and cook until softened, about 5 minutes.
- Add the black beans and cook for another 2-3 minutes.
- Pour the beaten eggs into the skillet and stir gently until scrambled and cooked through.
- Season with salt and pepper to taste.
