  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth, low sodium
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup couscous
  • 2 tbsp fresh parsley, chopped for garnish
  • 1 tbsp tomato paste
