Ingredients
- 1 lb stew meat, cut into bite-sized pieces
- 1 onion, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups beef broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp thyme
- Salt and pepper to taste
- 1 cup couscous
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add the stew meat and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the diced onion, sliced carrots, diced potatoes, and minced garlic. Cook until the vegetables are slightly softened.
- Add the can of diced tomatoes, beef broth, cumin, paprika, thyme, salt, and pepper. Stir well to combine.
- Return the browned stew meat to the pot. Bring the stew to a boil, then reduce heat to low and let it simmer for 1-2 hours, or until the meat is tender.
- While the stew is simmering, prepare the couscous according to package instructions.
- Once the stew is done, serve it over the cooked couscous.
- Garnish with fresh parsley and enjoy!
