Ingredients

  • 1 lb stew meat, cut into bite-sized pieces
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 cup couscous
  • Fresh parsley for garnish

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the stew meat and cook until browned on all sides. Remove from the pot and set aside.
  • In the same pot, add the diced onion, sliced carrots, diced potatoes, and minced garlic. Cook until the vegetables are slightly softened.
  • Add the can of diced tomatoes, beef broth, cumin, paprika, thyme, salt, and pepper. Stir well to combine.
  • Return the browned stew meat to the pot. Bring the stew to a boil, then reduce heat to low and let it simmer for 1-2 hours, or until the meat is tender.
  • While the stew is simmering, prepare the couscous according to package instructions.
  • Once the stew is done, serve it over the cooked couscous.
  • Garnish with fresh parsley and enjoy!
