Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 cup fresh green beans, trimmed
- 1 cup fresh or frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes, until softened.
- Add the bell peppers, zucchini, and yellow squash and sauté for 5-7 minutes, until the vegetables are tender.
- Add the green beans, peas, thyme, oregano, salt, and black pepper and sauté for an additional 5-7 minutes, until the vegetables are cooked to your liking.
