Ingredients
- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 cup mushrooms, sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until the rice is tender and the water has been absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
- Add the red bell pepper, zucchini, and mushrooms to the skillet and sauté for 5-7 minutes, or until the vegetables are tender.
- Stir in the oregano, salt, and black pepper.
- When the rice is done, add it to the skillet with the vegetables and stir to combine.
- Garnish with chopped parsley and serve hot.
