Ingredients

  • 2 cups fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup pine nuts
  • 3 garlic cloves
  • Salt and pepper to taste
  • 1 pound pasta of your choice
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chicken, diced

Instructions

  • In a food processor, combine the basil, Parmesan cheese, olive oil, pine nuts, garlic cloves, salt, and pepper. Blend until smooth.
  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat some olive oil over medium heat. Add the cherry tomatoes and cook until softened, about 5 minutes.
  • Add the cooked chicken to the skillet and cook until heated through.
  • Add the pesto sauce to the skillet and stir to combine with the tomatoes and chicken.
  • Add the cooked pasta to the skillet and toss to coat with the sauce.
