Ingredients
- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra-virgin olive oil
- 1/3 cup pine nuts
- 3 garlic cloves
- Salt and pepper to taste
- 1 pound pasta of your choice
- 1 cup cherry tomatoes, halved
- 1 cup cooked chicken, diced
Instructions
- In a food processor, combine the basil, Parmesan cheese, olive oil, pine nuts, garlic cloves, salt, and pepper. Blend until smooth.
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat some olive oil over medium heat. Add the cherry tomatoes and cook until softened, about 5 minutes.
- Add the cooked chicken to the skillet and cook until heated through.
- Add the pesto sauce to the skillet and stir to combine with the tomatoes and chicken.
- Add the cooked pasta to the skillet and toss to coat with the sauce.
