Ingredients

  • 1 cup toor dal
  • 1 cup mixed vegetables (carrots, green beans, drumsticks, potatoes, eggplant)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tablespoon sambar powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida
  • A few curry leaves
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 2 cups water

Directions

    Rinse the toor dal and cook in a pressure cooker with 2 cups of water until soft.

    In a pan, heat oil and add mustard seeds, cumin seeds, and asafoetida until they splutter.

    Add curry leaves, chopped onions, and green chilies. Sauté until onions are translucent.

    Mix in tomatoes and cook until soft.

    Add mixed vegetables, sambar powder, turmeric, and salt. Cook for 5 minutes, stirring occasionally.

    Combine the cooked dal with the vegetables, adding water to reach desired consistency.
