Ingredients
- 1 cup toor dal
- 1 cup mixed vegetables (carrots, beans, drumsticks, etc.)
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 tablespoon sambar powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida
- A few curry leaves
- 2 tablespoons oil
- Salt to taste
Instructions
- 1. Wash the toor dal and pressure cook it with 2 cups of water until soft.
- 2. In a separate pan, heat oil and add mustard seeds, cumin seeds, and asafoetida.
- 3. Once the seeds start to splutter, add curry leaves, chopped onions, and green chilies.
- 4. Saute until the onions turn translucent.
- 5. Add the chopped tomatoes and cook until they become soft.
- 6. Add the mixed vegetables, sambar powder, turmeric powder, and salt.
- 7. Mix well and cook for a few minutes.
- 8. Add the cooked dal to the pan and mix everything together.
- 9. Add water if needed to adjust the consistency.
- 10. Simmer for 10-15 minutes until the flavors blend well.
- 11. Serve hot with rice or idli.
