Ingredients

  • 1 cup toor dal
  • 1 cup mixed vegetables (carrots, beans, drumsticks, etc.)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tablespoon sambar powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida
  • A few curry leaves
  • 2 tablespoons oil
  • Salt to taste

Instructions

  • 1. Wash the toor dal and pressure cook it with 2 cups of water until soft.
  • 2. In a separate pan, heat oil and add mustard seeds, cumin seeds, and asafoetida.
  • 3. Once the seeds start to splutter, add curry leaves, chopped onions, and green chilies.
  • 4. Saute until the onions turn translucent.
  • 5. Add the chopped tomatoes and cook until they become soft.
  • 6. Add the mixed vegetables, sambar powder, turmeric powder, and salt.
  • 7. Mix well and cook for a few minutes.
  • 8. Add the cooked dal to the pan and mix everything together.
  • 9. Add water if needed to adjust the consistency.
  • 10. Simmer for 10-15 minutes until the flavors blend well.
  • 11. Serve hot with rice or idli.
