Ingredients

  • 1 cup toor dal
  • 1 cup mixed vegetables (carrots, beans, potatoes, etc.)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp sambar powder
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A few curry leaves
  • 2-3 dry red chilies
  • 1 tbsp tamarind paste
  • Salt to taste
  • 2 tbsp oil
  • Water as needed

Instructions

  • 1. Pressure cook the toor dal with turmeric powder until soft.
  • 2. In a separate pan, heat oil and add mustard seeds, cumin seeds, dry red chilies, and curry leaves.
  • 3. Add onions and sauté until translucent. Then add tomatoes and cook until soft.
  • 4. Add the mixed vegetables, sambar powder, tamarind paste, and salt. Cook until the vegetables are tender.
  • 5. Add the cooked dal to the vegetable mixture and simmer for a few minutes.
  • 6. Adjust the consistency by adding water as needed.
  • 7. Serve hot with rice or idli.
