Ingredients

  • 1 cup toor dal
  • 1 cup mixed vegetables (carrots, beans, potatoes, drumstick)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp sambar powder
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A few curry leaves
  • 2-3 dry red chilies
  • 1 tbsp tamarind paste
  • Salt to taste
  • 2 tbsp oil
  • Water as needed

Directions

    Rinse and pressure cook the toor dal with a pinch of turmeric powder until soft.

    In a large pot, heat oil and add mustard seeds, cumin seeds, red chilies, and curry leaves until they splutter.

    Add chopped onions and sauté until translucent, then add tomatoes and cook until softened.

    Mix in the vegetables, sambar powder, tamarind paste, and salt. Cook until vegetables are tender.
