Ingredients
- 1 cup toor dal
- 1 cup mixed vegetables (carrots, beans, potatoes, etc.)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/2 tsp turmeric powder
- 1 tsp sambar powder
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- A few curry leaves
- 2-3 dry red chilies
- 1 tbsp tamarind paste
- Salt to taste
- 2 tbsp oil
- Water as needed
Instructions
- 1. Pressure cook the toor dal with turmeric powder until soft.
- 2. In a separate pan, heat oil and add mustard seeds, cumin seeds, dry red chilies, and curry leaves.
- 3. Add onions and sauté until translucent. Then add tomatoes and cook until soft.
- 4. Add the mixed vegetables, sambar powder, tamarind paste, and salt. Cook until the vegetables are tender.
- 5. Add the cooked dal to the vegetable mixture and simmer for a few minutes.
- 6. Adjust the consistency by adding water as needed.
- 7. Serve hot with rice or idli.
