  • 1 lb salted cod
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 cup chopped scallions
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup water
  • 1 egg, beaten
  • Oil for frying

Instructions

  • Soak the salted cod in water overnight to remove excess salt. Drain and rinse the cod.
  • In a large bowl, combine the flour, baking powder, salt, black pepper, garlic powder, onion powder, and paprika.
  • Add the scallions, bell pepper, onion, water, and egg to the dry ingredients. Mix well.
  • Add the salted cod to the mixture and stir until well combined.
  • Heat oil in a large skillet over medium-high heat.
  • Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  • Remove the fritters from the oil and drain on paper towels.
  • Serve hot with your favorite dipping sauce.
