Ingredients
- 1 lb salted cod
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 cup chopped scallions
- 1/2 cup chopped bell pepper
- 1/2 cup chopped onion
- 1/2 cup water
- 1 egg, beaten
- Oil for frying
Instructions
- Soak the salted cod in water overnight to remove excess salt. Drain and rinse the cod.
- In a large bowl, combine the flour, baking powder, salt, black pepper, garlic powder, onion powder, and paprika.
- Add the scallions, bell pepper, onion, water, and egg to the dry ingredients. Mix well.
- Add the salted cod to the mixture and stir until well combined.
- Heat oil in a large skillet over medium-high heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
- Serve hot with your favorite dipping sauce.
