Ingredients
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 tablespoon olive oil
- 6 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup cooked pasta
- 1 cup chopped spinach
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender.
- Add the vegetable broth, diced tomatoes, dried thyme, and dried oregano. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add the cooked pasta and chopped spinach. Cook for an additional 5 minutes.
- Season with salt and pepper to taste.
