Ingredients

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 6 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup cooked pasta
  • 1 cup chopped spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender.
  • Add the vegetable broth, diced tomatoes, dried thyme, and dried oregano. Bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Add the cooked pasta and chopped spinach. Cook for an additional 5 minutes.
  • Season with salt and pepper to taste.
