Ingredients

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 hard-boiled eggs, sliced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup shredded cheddar cheese

Instructions

  • Cook quinoa according to package instructions.
  • In a large bowl, combine cooked quinoa, black beans, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, garlic powder, salt, and black pepper.
