Ingredients
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 hard-boiled eggs, sliced
- 1/2 cup plain Greek yogurt
- 1/4 cup shredded cheddar cheese
Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, black beans, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, garlic powder, salt, and black pepper.
- Pour dressing over quinoa mixture and toss to combine.
- Divide mixture into four bowls and top each with sliced hard-boiled eggs, a dollop of Greek yogurt, and a sprinkle of shredded cheddar cheese.
