Ingredients
- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 cup frozen peas
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cumin
Instructions
- In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until softened.
- Add the bell peppers and zucchini and sauté for another 5-7 minutes, until the vegetables are tender.
- Add the frozen peas and spices and stir to combine.
- Add the cooked rice to the skillet and stir to combine.
