Ingredients
- 1 cup rice
- 2 potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon turmeric
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander
- 1/4 teaspoon cinnamon
- 2 cups vegetable broth
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and cook until softened.
- Add the diced potatoes and cook for 5 minutes, stirring occasionally.
- Add the rice and spices to the pot, and stir to coat the rice and potatoes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice and potatoes are tender.
- Remove from heat and let sit for 5 minutes.
- Fluff the rice with a fork and stir in the chopped parsley.
- Serve hot and enjoy!
