Ingredients
- 1 cup red lentils
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1 can chickpeas, drained and rinsed
- Salt and pepper to taste
Instructions
- Rinse the lentils and place them in a pot with the water. Bring to a boil, then reduce heat and simmer for 20 minutes or until tender.
- While the lentils are cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.
- Add the cumin, coriander, turmeric, paprika, and cayenne pepper to the skillet and stir to combine.
- Add the diced tomatoes and chickpeas to the skillet and stir to combine. Simmer for 10 minutes.
- When the lentils are done, drain any excess water and add them to the skillet. Stir to combine and season with salt and pepper to taste.
- Serve hot and enjoy!
