Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • Salt and pepper to taste

Instructions

  • Rinse the lentils and place them in a pot with the water. Bring to a boil, then reduce heat and simmer for 20 minutes or until tender.
  • While the lentils are cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.
  • Add the cumin, coriander, turmeric, paprika, and cayenne pepper to the skillet and stir to combine.
  • Add the diced tomatoes and chickpeas to the skillet and stir to combine. Simmer for 10 minutes.
  • When the lentils are done, drain any excess water and add them to the skillet. Stir to combine and season with salt and pepper to taste.
  • Serve hot and enjoy!
