Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • Salt and pepper to taste

Directions

    Rinse and drain the red lentils, then add them to a pot with 2 cups of water. Bring to a boil, reduce the heat, and simmer for 20 minutes until tender.
