Ingredients
- 1 red capsicum, sliced
- 1 block of firm tofu, cubed
- 1 tablespoon of vegetable oil
- 1 tablespoon of soy sauce
- 1 tablespoon of cornstarch
- 1 teaspoon of garlic powder
- 1 teaspoon of ginger powder
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the soy sauce, cornstarch, garlic powder, ginger powder, and a pinch of salt and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the sliced red capsicum and stir-fry for 2-3 minutes, until slightly softened.
- Add the cubed tofu and stir-fry for another 2-3 minutes, until lightly browned.
- Pour the soy sauce mixture over the tofu and capsicum, and stir-fry for another 1-2 minutes, until the sauce has thickened and coated the vegetables and tofu.
- Serve hot over rice.
