Ingredients

  • 1 small red cabbage, shredded
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 stalk lemongrass, bruised
  • 1 Thai chili, sliced
  • 1 lime, juiced

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the onion, celery, garlic, lemongrass, and Thai chili. Cook until the vegetables are softened.
  • Add the shredded red cabbage and cook for another 5 minutes.
  • Pour in enough water to cover the vegetables. Bring to a boil and then reduce the heat to simmer for about 20 minutes.
  • Remove the lemongrass stalk and discard.
  • Using an immersion blender, blend the soup until smooth.
  • Stir in the lime juice and season with salt and pepper to taste.
  • Serve hot and enjoy!
