Ingredients
- 1 small red cabbage, shredded
- 2 stalks celery, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 stalk lemongrass, bruised
- 1 Thai chili, sliced
- 1 lime, juiced
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion, celery, garlic, lemongrass, and Thai chili. Cook until the vegetables are softened.
- Add the shredded red cabbage and cook for another 5 minutes.
- Pour in enough water to cover the vegetables. Bring to a boil and then reduce the heat to simmer for about 20 minutes.
- Remove the lemongrass stalk and discard.
- Using an immersion blender, blend the soup until smooth.
- Stir in the lime juice and season with salt and pepper to taste.
- Serve hot and enjoy!
