Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup grated radishes
  • 1/2 cup milk

Instructions

  • Preheat oven to 350°F. Grease and flour a 9-inch cake pan.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla.
  • Add dry ingredients to wet ingredients, alternating with milk, and mix until just combined.
  • Fold in grated radishes.
  • Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
