Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  • Rinse quinoa in a fine mesh strainer and place in a medium saucepan with water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until water is absorbed and quinoa is tender.
  • In a large bowl, combine cooked quinoa, bell peppers, avocado, cherry tomatoes, red onion, and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over quinoa mixture and toss to combine.
