About this recipe

This vibrant Quinoa Sunrise Bowl is perfect for a nutritious breakfast or midday meal. With its colorful array of fresh vegetables and hearty quinoa base, this dish provides a boost of protein, fiber, and essential vitamins, keeping you energized throughout the day.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Directions

  1. 1

Rinse the quinoa in a fine mesh strainer under cold water.

  2. 2

In a medium saucepan, combine quinoa and water. Bring to a boil, cover, and simmer on low heat for 15-20 minutes or until water is absorbed and quinoa is fluffy.

  3. 3

In a large bowl, mix the cooked quinoa with red and yellow bell peppers, avocado, cherry tomatoes, red onion, and cilantro.

  4. 4

In a small bowl, whisk together lime juice, olive oil, salt, and pepper.

  5. 5

Pour the dressing over the quinoa mixture and gently toss until all ingredients are coated.

  6. 6

Divide the mixture into bowls and serve immediately. Garnish with additional cilantro if desired.

Chef's tip

Ensure the quinoa is thoroughly rinsed to remove any bitterness. This dish can be served warm or at room temperature.
