Ingredients
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- Rinse quinoa in a fine mesh strainer and place in a medium saucepan with water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until water is absorbed and quinoa is tender.
- In a large bowl, combine cooked quinoa, bell peppers, avocado, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over quinoa mixture and toss to combine.
- Divide quinoa mixture into bowls and serve immediately.
