Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 4 eggs
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa in a fine mesh strainer and add it to a medium saucepan with the water. Bring to a boil, then reduce the heat to low and cover. Cook for 15-20 minutes, or until the quinoa is tender and the water has been absorbed.
  • While the quinoa is cooking, heat a nonstick skillet over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  • Divide the cooked quinoa between four bowls. Top each bowl with a cooked egg, sliced avocado, cherry tomatoes, and cilantro. Squeeze a lime wedge over each bowl and season with salt and pepper to taste.
  • Serve immediately and enjoy!
