- 1 cup quinoa
- 2 cups water
- 4 eggs
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Rinse the quinoa in a fine mesh strainer and add it to a medium saucepan with the water. Bring to a boil, then reduce the heat to low and cover. Cook for 15-20 minutes, or until the quinoa is tender and the water has been absorbed.
- While the quinoa is cooking, heat a nonstick skillet over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
- Divide the cooked quinoa between four bowls. Top each bowl with a cooked egg, sliced avocado, cherry tomatoes, and cilantro. Squeeze a lime wedge over each bowl and season with salt and pepper to taste.
- Serve immediately and enjoy!
