Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 4 large eggs
- 1 tablespoon olive oil
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Salt and pepper to taste
- 1 teaspoon red pepper flakes (optional)
- 1/2 cup kale, chopped

Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
