Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup cooked black beans
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
- Add the bell pepper, zucchini, cherry tomatoes, and black beans to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Stir in the cooked quinoa, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, or until everything is heated through.
- Remove from heat and garnish with fresh cilantro.
