Ingredients
- 1 cup quinoa
- 2 cups water
- 1 avocado, diced
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon honey
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa in a fine mesh strainer and place in a medium saucepan with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until all the water has been absorbed and the quinoa is tender.
