Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • Rinse quinoa in a fine mesh strainer and place in a medium saucepan with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until all the water has been absorbed and the quinoa is tender.
