Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Directions

    Rinse the quinoa under cold water using a fine mesh strainer.

    Combine the quinoa and water in a medium saucepan. Bring to a boil, then reduce heat, cover and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes.
