- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F.
- In a large skillet, cook ground beef over medium heat until browned, stirring occasionally.
- Add onion and garlic and cook until onion is translucent.
- Stir in diced tomatoes, black beans, corn, chili powder, cumin, salt, and black pepper.
- Simmer for 10 minutes.
- Transfer mixture to a 9x13 inch baking dish.
- Sprinkle shredded cheddar cheese over the top.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
