This quick and easy chicken stir fry is a delightful blend of tender chicken, vibrant vegetables, and a savory sauce. Ready in just 30 minutes, it’s an ideal choice for a busy weeknight dinner. Packed with flavor and nutrition, this dish satisfies every craving.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon honey
  • 1/4 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 tablespoon rice vinegar

Directions

  1. 1

In a small bowl, whisk together soy sauce, sesame oil, cornstarch, honey, rice vinegar, and chicken broth. Set aside.

  2. 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

  3. 3

Add chicken slices and cook until browned on all sides, about 4-5 minutes. Remove and set aside.

  4. 4

Add remaining oil and garlic, ginger, and mixed vegetables to the skillet. Stir-fry until vegetables are crisp-tender, about 3-4 minutes.

  5. 5

Return the chicken to the skillet with the vegetables.

  6. 6

Pour in the sauce mixture, stirring well to combine. Cook for an additional 2-3 minutes, until the sauce thickens.

  7. 7

Season with salt and pepper to taste.

  8. 8

Serve hot, garnished with sesame seeds if desired.

Chef's tip

For a more pronounced flavor, you can add a splash of dry sherry to the sauce.
