Ingredients
- 2 cups cauliflower rice
- 2 tbsp ghee
- 4 eggs
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper, to taste
Instructions
- Heat the ghee in a large skillet over medium-high heat.
- Add the cauliflower rice and cook for 5-7 minutes, stirring occasionally, until tender and lightly browned.
- Push the cauliflower rice to one side of the skillet and crack the eggs into the other side.
- Cook the eggs to your liking, seasoning with salt and pepper as desired.
- Divide the cauliflower rice and eggs between two bowls.
- Top each bowl with sliced avocado, chopped cilantro, and a squeeze of lime juice.
- Serve immediately and enjoy!
