Ingredients

  • 2 cups cauliflower rice
  • 2 tbsp ghee
  • 4 eggs
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Salt and pepper, to taste

Instructions

  • Heat the ghee in a large skillet over medium-high heat.
  • Add the cauliflower rice and cook for 5-7 minutes, stirring occasionally, until tender and lightly browned.
  • Push the cauliflower rice to one side of the skillet and crack the eggs into the other side.
  • Cook the eggs to your liking, seasoning with salt and pepper as desired.
  • Divide the cauliflower rice and eggs between two bowls.
  • Top each bowl with sliced avocado, chopped cilantro, and a squeeze of lime juice.
  • Serve immediately and enjoy!
