Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 1 large sweet potato, peeled and cubed
  • 1 red bell pepper, sliced
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup pumpkin seeds
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Directions

    Preheat oven to 400°F (200°C).

    Combine quinoa and water in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes until quinoa is tender and water is absorbed.

    On a baking sheet, spread chickpeas, sweet potato, and bell pepper. Drizzle with olive oil, sprinkle with cumin, smoked paprika, salt, and pepper, then toss to coat.
