Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 large sweet potato, peeled and cubed
- 1 red bell pepper, sliced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/4 cup pumpkin seeds
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F.
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.
- Meanwhile, spread chickpeas, sweet potato, and red bell pepper on a baking sheet. Drizzle with olive oil and sprinkle with cumin, smoked paprika, salt, and pepper. Toss to coat.
- Roast vegetables for 20-25 minutes, or until sweet potato is tender and chickpeas are crispy.
- In a small bowl, whisk together tahini, lemon juice, honey, and a pinch of salt.
- To assemble bowls, divide quinoa among four bowls. Top with roasted vegetables, avocado, cilantro, green onions, and pumpkin seeds. Drizzle with tahini dressing.
- Serve immediately and enjoy!
