Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 1 large sweet potato, peeled and cubed
  • 1 red bell pepper, sliced
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup pumpkin seeds
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 400°F.
  • In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.
  • Meanwhile, spread chickpeas, sweet potato, and red bell pepper on a baking sheet. Drizzle with olive oil and sprinkle with cumin, smoked paprika, salt, and pepper. Toss to coat.
  • Roast vegetables for 20-25 minutes, or until sweet potato is tender and chickpeas are crispy.
  • In a small bowl, whisk together tahini, lemon juice, honey, and a pinch of salt.
  • To assemble bowls, divide quinoa among four bowls. Top with roasted vegetables, avocado, cilantro, green onions, and pumpkin seeds. Drizzle with tahini dressing.
  • Serve immediately and enjoy!
