Ingredients
- 1 can (15 ounces) pumpkin puree
- 1 package (8 ounces) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 container (8 ounces) frozen whipped topping, thawed
- 1 package (12 ounces) graham crackers, crushed
- 1/2 cup unsalted butter, melted
- 1/4 cup chopped pecans
Instructions
- In a large mixing bowl, beat the cream cheese until smooth.
- Add the powdered sugar, vanilla extract, and pumpkin pie spice. Mix until well combined.
- Fold in the pumpkin puree and whipped topping until fully incorporated.
- In a separate bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly coated.
- Press half of the graham cracker mixture into the bottom of a 9x13-inch baking dish to form the crust.
- Spread the pumpkin mixture evenly over the crust.
- Sprinkle the remaining graham cracker mixture and chopped pecans over the top.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
