Ingredients

  • 2 cups basmati rice
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 bell pepper, sliced
  • 1 cup green peas
  • 4 cloves garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • 2 tbsp oil

Instructions

  • 1. Rinse the basmati rice until the water runs clear. Set aside.
  • 2. In a large pot, heat oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  • 3. Add chopped onion and garlic, sauté until translucent.
  • 4. Add carrots, bell pepper, and green peas. Cook for 5 minutes.
  • 5. Stir in turmeric powder, garam masala, salt, and pepper.
  • 6. Add rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low and cover.
  • 7. Cook for 20 minutes or until rice is tender and liquid is absorbed.
  • 8. Fluff the rice with a fork and serve hot.
