Ingredients
- 2 cups basmati rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- 4 cups water
- Fresh cilantro, for garnish
Instructions
- 1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- 2. Heat oil in a large pot or pan over medium heat. Add the cumin seeds and let them splutter.
- 3. Add the sliced onions, minced garlic, grated ginger, and slit green chilies. Saute until the onions turn golden brown.
- 4. Add the mixed vegetables and cook for 2-3 minutes.
- 5. Add the soaked and drained basmati rice to the pot. Stir well to combine with the vegetables.
- 6. Add turmeric powder, garam masala, and salt. Mix well.
- 7. Pour in the water and bring it to a boil. Once it starts boiling, reduce the heat to low and cover the pot with a tight-fitting lid.
- 8. Cook for 15-20 minutes or until the rice is cooked and all the water is absorbed.
- 9. Remove from heat and let it sit covered for 5 minutes.
- 10. Fluff the rice with a fork and garnish with fresh cilantro.
