Ingredients

  • 1 1/2 cups basmati rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons ghee or oil
  • 3 cups water
  • Fresh cilantro, chopped, for garnish

Directions

    Rinse and soak the basmati rice in water for 20 minutes, then drain.

    Heat ghee/oil in a pot over medium heat and add cumin seeds to splutter.

    Stir in the mixed vegetables and cook for 2-3 minutes.

    Add the drained rice and mix thoroughly with the vegetable mix.

    Pour in water, bring to a boil, then cover and reduce to low heat.
