Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (28 ounces) crushed tomatoes
- 6 large eggs
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the garlic, cumin, smoked paprika, salt, and black pepper and cook for 1 minute.
- Add the crushed tomatoes and bring to a simmer.
- Use a spoon to make 6 wells in the tomato mixture.
- Crack an egg into each well.
- Cover the skillet and cook until the eggs are set, about 5-7 minutes.
