Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 cup black beans, drained and rinsed
- 1/2 cup diced bell peppers
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- 1/4 cup salsa
- Salt and pepper to taste
Instructions
- 1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed.
- 2. In a large bowl, combine cooked quinoa, black beans, bell peppers, red onion, and cilantro. Mix well.
- 3. Divide quinoa mixture into bowls and top with avocado slices and salsa.
