Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1/4 cup salsa
  • Salt and pepper to taste

Instructions

  • 1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed.
