Ingredients

  • 1 lb. lean ground turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (28 oz.) crushed tomatoes
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (15 oz.) kidney beans, drained and rinsed
  • 1 can (15 oz.) corn, drained
  • 2 tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 cups chicken broth

Instructions

  • In a large pot or Dutch oven, cook the ground turkey over medium-high heat until browned, breaking it up with a wooden spoon as it cooks.
  • Add the onion, garlic, red bell pepper, and green bell pepper to the pot and cook until the vegetables are tender, about 5 minutes.
  • Stir in the crushed tomatoes, black beans, kidney beans, corn, chili powder, cumin, smoked paprika, salt, and black pepper.
  • Add the chicken broth and bring the chili to a simmer.
  • Reduce the heat to low and let the chili simmer for 30-40 minutes, stirring occasionally.
