Ingredients
- 1 lb. lean ground turkey
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (28 oz.) crushed tomatoes
- 1 can (15 oz.) black beans, drained and rinsed
- 1 can (15 oz.) kidney beans, drained and rinsed
- 1 can (15 oz.) corn, drained
- 2 tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 cups chicken broth
Instructions
- In a large pot or Dutch oven, cook the ground turkey over medium-high heat until browned, breaking it up with a wooden spoon as it cooks.
- Add the onion, garlic, red bell pepper, and green bell pepper to the pot and cook until the vegetables are tender, about 5 minutes.
- Stir in the crushed tomatoes, black beans, kidney beans, corn, chili powder, cumin, smoked paprika, salt, and black pepper.
- Add the chicken broth and bring the chili to a simmer.
- Reduce the heat to low and let the chili simmer for 30-40 minutes, stirring occasionally.
- Serve hot with your favorite toppings, such as shredded cheese, sour cream, and chopped cilantro.
