Ingredients
- 1 cup whole wheat flour
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsweetened almond milk
- 1 ripe banana, mashed
- 1/2 cup chopped strawberries
- 1 egg
- 1 tbsp honey
- 1 tsp vanilla extract

Instructions
- In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
- In a separate bowl, mix together the almond milk, mashed banana, chopped strawberries, egg, honey, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium heat and spray with cooking spray.
- Using a 1/4 cup measure, pour the batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancake and cook for an additional 1-2 minutes, or until golden brown.
- Repeat with the remaining batter.
- Serve hot with additional sliced strawberries and a drizzle of honey, if desired.
