Ingredients

  • 500g lean beef mince
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can chopped tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 1 cup cooked quinoa

Instructions

  • In a large pan, brown the mince over medium-high heat.
  • Add the onion and garlic and cook until softened.
  • Add the bell peppers and cook for a few minutes until they start to soften.
  • Add the chopped tomatoes, tomato paste, oregano, basil, paprika, cumin, salt, and pepper. Stir well to combine.
  • Reduce the heat to low and simmer for 20-30 minutes, stirring occasionally.
  • Serve over cooked quinoa.
