Ingredients
- 500g lean beef mince
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can chopped tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper, to taste
- 1 cup cooked quinoa
Instructions
- In a large pan, brown the mince over medium-high heat.
- Add the onion and garlic and cook until softened.
- Add the bell peppers and cook for a few minutes until they start to soften.
- Add the chopped tomatoes, tomato paste, oregano, basil, paprika, cumin, salt, and pepper. Stir well to combine.
- Reduce the heat to low and simmer for 20-30 minutes, stirring occasionally.
- Serve over cooked quinoa.
